Many of today’s celebrity cooks have said that Four Seasons - originally published in 1970 - remains one of their favourite cookery books.  It’s not hard to see why: Costa’s no-nonsense style and her enthusiasm for the food are extremely engaging, and the recipes depend on ingredients which are in season.  There is always sound advice for the cook or host - “There’s very seldom enough to eat at parties…” - and her understated style can often be amusing: “The showman gourmet likes to dress her, or more probably his, green salad at the table…”  Harsh, but fair. - review by Dan Fenton
